Ingredients

• Peach (fresh & ripe - skinned & diced) (chopped) — 1⁄2 fresh
• Bacardi Carta Blanca light rum — 2 oz (60 ml)
• Plum jam — 1 spoon
• Chili pepper sugar syrup — ½ oz (12.5 ml)
• Thomas Henry Ginger Beer — Top up with
• Spiced rum — ½ oz (15 ml)

How to make it

1. MUDDLE peach in base of shaker.
2. Add next rum, plum jam and spice syrup.
3. SHAKE with ice and fine strain into ice-filled glass.
4. TOP with ginger beer and a float of BACARDÍ Oak Heart.
