How to make it
- Make a lemon balm syrup by dissolving 75g sugar in 75ml water with 8-10 lemon balm leaves.
- Put the gin, lemon juice and 1-2 tsp of syrup in a cocktail shaker over ice and shake until chilled.
- Pour into a glass and top with club soda.
