Ingredients

• Raspberries (fresh) — 5 fresh
• Gin — 1¾ oz (52.5 ml)
• Lemon juice (freshly squeezed) — ¼ oz (7.5 ml)
• Pasteurised egg white — ½ oz (15 ml)
• Raspberry (framboise) sugar syrup — ½ oz (15 ml)

How to make it

1. SHAKE all ingredients (including raspberries which will be pulped by shaking) with ice.
2. Fine strain into chilled glass.
3. Garnish with lemon zest twist and fresh raspberry.

A refreshing cocktail with raspberries and gin.
