FAQ

How much ice should I use?

More than feels reasonable: fill the glass or shaker. A full glass of ice melts slower than two lonely cubes, so the drink is colder AND less watery.

Can I use bottled lime juice?

For sours — no. Bottled juice is pasteurised and flat; a fresh lime costs less than the drink it saves.

What if I don't have a shaker?

A jar with a tight lid shakes just as well. Strain through its half-open lid.

Shake or stir — how do I know?

Juice, syrup, cream, egg → shake. Only spirits, vermouths and bitters → stir.

How long should I shake?

12–15 hard seconds, until the tin frosts outside.

Why did my drink turn out watery?

Warm glass, too little ice, or the drink sat before serving. Cold glass, full ice, serve immediately.

What is 1 oz in ml?

30 ml for home purposes (29.57 exactly). A cl is 10 ml.

Can I make cocktails without alcohol?

Yes — the catalogue has a zero-proof section: same technique, same glassware, no spirit.

How do I store vermouth?

In the fridge, and drink the bottle within a month — it is wine, not spirit.

What five bottles start a home bar?

Vodka, gin, white rum, bourbon, tequila — they cover most of the classics. Our blog has the full route.

Why is my egg-white foam not forming?

Dry shake first (no ice), 10 seconds, then shake with ice. Aquafaba works too — two teaspoons.
