How it is made
Pear purée is made by blending ripe pears until smooth, often with the addition of a little lemon juice to enhance flavor and prevent browning. It can be strained for a finer texture or left chunky for a more rustic feel. The purée can be made fresh or purchased pre-made from specialty stores.
History
The use of fruit purées in cocktails dates back to the early 20th century, as bartenders began experimenting with fresh fruits and purees to create innovative drinks. Pear purée, specifically, gained popularity as bartenders sought to incorporate the delicate flavor of pears into cocktails, offering a unique alternative to more commonly used fruits like strawberries and raspberries.
In cocktails
Bartenders often use pear purée in cocktails to add a sweet and fruity element, balancing out stronger spirits and mixers. It can be used in a variety of cocktails, from refreshing spritzers to creamy dessert drinks. When serving, it is best to shake or blend the purée with ice to ensure a smooth consistency, and it can be garnished with fresh pear slices or herbs for an elegant presentation.
Worth knowing
Pear purée can also be used in desserts and sauces, making it a versatile ingredient beyond cocktails.
