- Lemon juice (freshly squeezed) — 22.5 ml
- Pasteurised egg white — 15 ml
- Sugar syrup (65.0°brix, 2 sugar to 1 water rich syrup) — 15 ml

- Infuse gin with breakfast tea for 5 minutes.
- Strain to remove tea.
- SHAKE all ingredients with ice.
- Fine strain into chilled glass.
