Alexander's Clover Club (House-Made)
A cocktail with egg white and raspberry.

- Gin — 60 ml
- Lemon juice (freshly squeezed) — 22.5 ml
- 'Simple' sugar syrup (1 sugar to 1 water) — 22.5 ml
- Pasteurised egg white — 30 ml
- Raspberries (fresh) — 5 whole

- Add egg white to tin.
- Add the rest of the ingredients and DRY SHAKE (without ice) for 5-6 seconds.
- Then add ice and shake again for 15 seconds.
- Fine strain into chilled glass.
- Express lemon peel over the top then discard. Garnish with fresh raspberries.
