A refreshing cocktail with pepper and pineapple.

- Sugar syrup (65.0°brix, 2 sugar to 1 water rich syrup) — 15 ml
- Thomas Henry Soda Water — Top up with

- MUDDLE peppercorns in base of shaker.
- Add next four ingredients, SHAKE with ice and fine strain into chilled glass.
- TOP with splash soda.
- Add a splash of soda.
