A cocktail with blackberries and spiced rum.

- Blackberries — 5 fresh
- Spiced rum — 60 ml
- Lemon juice (freshly squeezed) — 22.5 ml
- Sugar syrup (65.0°brix, 2 sugar to 1 water rich syrup) — 15 ml
- Pasteurised egg white — 15 ml
- Charcoal powder — 1 spoon

- MUDDLE blackberries in base of shaker.
- Add other ingredients, SHAKE with ice and strain back into shaker.
- DRY SHAKE (without ice) and fine strain into chilled glass.
