A cocktail with rum and homemade allspice liqueur.

- Havana Club Especial — 90 ml
- Lime juice (freshly squeezed) — 30 ml
- Demerara / dark Muscovado sugar syrup (2 sugar to 1 water) — 25 ml
- Pimento dram liqueur — 1 spoon
- Mint (fresh) sprigs — 1 fresh
- Thomas Henry Soda Water — Top up with

- Pour lime juice, sugar syrup and rum in a shaker.
- Instead of using a bar spoon of dram liqueur, switch that out with homemade allspice tequila.
- Shake your mixture over cracked ice for about 20 seconds.
- Open pour it into your highball glass and top it off with soda.
