Mattias's Bellini (Difford's recipe)
A fruity cocktail with peach puree and prosecco.

- Peach purée — 60 ml
- Peach 'schnapps' liqueur — 10 ml
- Lemon juice (freshly squeezed) — 7.5 ml
- Prosecco sparkling wine — 60 ml

- SHAKE first 3 ingredients with ice.
- Fine strain into chilled glass charged with prosecco.
- Serve.
