Spice 75 is a refreshing cocktail with spiced syrup and sparkling wine, perfect for winter celebrations.

- Sugar — 60 ml
- Allspice — 1 tbsp
- Light rum — 200 ml
- Lime juice — 90 ml
- Champagne — 60 ml

- Step 1: Gently warm 60g golden caster sugar in a pan with 30ml water and 1 tbsp allspice.
- Step 2: Cook gently until the sugar has dissolved, then leave the mixture to cool.
- Step 3: Strain through a sieve lined with a coffee filter (or a double layer of kitchen paper).
- Step 4: Pour 60ml of the spiced syrup into a cocktail shaker along with 200ml rum and 90ml lime juice.
- Step 5: Shake with ice and strain between six flute glasses.
- Step 6: Top up with 600ml champagne and garnish each with an orange twist.
