- Pineau des Charentes blanc — 45 ml
- Sugar syrup (65.0°brix, 2 sugar to 1 water rich syrup) — 10 ml
- Lemon juice (freshly squeezed) — 22.5 ml
- Pasteurised egg white — 1⁄2 fresh
- Angostura Aromatic Bitters — 3 dash

- Strain back into shaker.
- DRY SHAKE (without ice) and fine strain into chilled glass.
