A refreshing cocktail with basil and gin.

- Basil leaves — 6 fresh
- Portobello Old Tom gin — 50 ml
- Lemon juice (freshly squeezed) — 30 ml
- Sugar syrup (65.0°brix, 2 sugar to 1 water rich syrup) — 15 ml
- Celery bitters — 3 dash
- Pasteurised egg white — 15 ml

- Lightly MUDDLE basil in base of shaker (just to bruise).
- Add other ingredients, SHAKE with ice and strain back into shaker.
- DRY SHAKE (without ice) and fine strain into chilled glass.
