A cocktail with egg white and ruby port.

- Teeling Small Batch Irish whiskey — 60 ml
- Lemon juice (freshly squeezed) — 30 ml
- Sugar syrup (65.0°brix, 2 sugar to 1 water rich syrup) — 12.5 ml
- Ruby Port — 7.5 ml
- Egg White — 1 fresh
- Saline solution 4:1 (20g sea salt to 80g water) — 3 dash

- Pour all ingredients (excluding the Ruby Port) into the shaker, and do a dry shake.
- Once you're happy with your dry shake, add ice to the tin and shake for approximately 10 seconds.
- Double strain into your chilled coupe.
