A cocktail with Aperol and gin.

- Aperol Aperitivo — 60 ml
- Lemon juice (freshly squeezed) — 22.5 ml
- 'Simple' sugar syrup (1 sugar to 1 water) — 22.5 ml
- Gin — 15 ml

- Add Gin, Aperol, syrup and juice with ice in shaker.
- Shake for 15 sec.
- Strain to remove ice.
- Add egg white and shake for 30 sec.
- Double strain into coupe glass.
