- Lime juice (freshly squeezed) — 30 ml
- Pasteurised egg white — 15 ml
- Sugar syrup (65.0°brix, 2 sugar to 1 water rich syrup) — 10 ml

- SHAKE 4 ingredients with ice and strain back into shaker.
- DRY SHAKE (without ice) and fine strain into chilled glass (no ice).
- TOP with apple cream soda from a siphon.
