• Sugar syrup (65.0°brix, 2 sugar to 1 water rich syrup) — 15 ml
• Single cream / half-and-half — 20 ml
• Pasteurised egg white — 20 ml

1. SHAKE all ingredients with ice.
2. Fine strain into chilled glass.
3. Garnish with grated nutmeg & yuzu fruit zest.
