- Freshly squeezed lemon or lime juice — 30 ml
- Sugar syrup (65.0°brix, 2 sugar to 1 water rich syrup) — 15 ml
- Pasteurised egg white — 15 ml
- Soda from siphon — Top up with

- SHAKE first four ingredients with ice.
- Strain into chilled glass (no ice).
- TOP with soda from siphon.
