A classic cocktail with Islay whisky.

- Islay single malt (peated) Scotch whisky — 75 ml
- Demerara / dark Muscovado sugar syrup (2 sugar to 1 water) — 10 ml
- Peychaud's or other Creole-style bitters — 3 dash

- STIR whisky with three ice cubes in a glass.
- Add sugar syrup, bitters and two more ice cubes.
- STIR some more and add another two ice cubes.
- STIR a bit more, and if you have room, add more ice.
