Estrella Collins
A refreshing cocktail with tequila and soda.

- Reposado tequila (100% agave) — 60 ml
- Lime juice (freshly squeezed) — 25 ml
- Sugar syrup (65.0°brix, 2 sugar to 1 water rich syrup) — 25 ml
- Soda from siphon — 55 ml

- SHAKE first 3 ingredients with ice and strain into ice-filled glass whilst also pouring soda.
- Sprinkle a pinch of fleur de sel flakes mainly on the garnish but also over the glass.
