Bluzu Sour
A cocktail with tequila and yuzu, whipped to froth.

- Lemon juice (freshly squeezed) — 15 ml
- Lime juice (freshly squeezed) — 15 ml
- Blue curaçao liqueur — 30 ml
- Blanco tequila (100% agave) — 45 ml
- Yuzu liqueur — 60 ml
- Sugar syrup (65.0°brix, 2 sugar to 1 water rich syrup) — 30 ml
- Margarita Bitters — 1 dash (4 drops)
- Salt — 1 grind
- Pasteurised egg white — 30 ml
- Aquafaba (chickpea water) — 30 ml

- Combine all ingredients except bitters into shaker without ice.
- Shake until frothy.
- Add ice for shaking and half dash of bitters.
- Shake until frosty.
